Ingredients
  1. 1 1/2 cups oats (I used dry oatmeal with granola)
  2. 2 1/2 tbs honey
  3. 3/4 cup yogurt (I used Oikos Greek vanilla)
  4. Berries (assorted)
  5. Shredded coconut (optional)
Instructions
  1. To make the crust, mix oats with honey until firm.
  2. Press the oats into any kind of pie pan or round mold lined with parchment paper. Put another piece of parchment paper above the oats and press down with your hand.
  3. Place the oat crust in the freezer until it's hardens, about 10-15 minutes. I put an icepack over the parchment paper to press down the oat crust so it stays in place.
  4. While the oats are in the freezer, prep the berries. Slice them however you would like, or leave them whole.
  5. Take the oat crust out of the freezer, layer the yogurt, followed by the berries, and the shredded coconut.
  6. Enjoy!
