  1. For the quesadilla...
  2. Fresh mozzarella
  3. Red tomatoes
  4. Fresh Basil
  5. 2 small tortillas
  6. Balsamic glaze (thicker than balsamic vinegar)
  7. For the dressing...
  8. 2 tbs olive oil
  9. 1 tbs balsamic
  10. 1 tbs honey
  11. pinch of salt
  1. For the quesadilla...
  2. Slice the mozzarella to 1/4 inch and lay on one street taco size tortilla. Drizzle balsamic glaze over the mozzarella. Slice tomatoes about a 1/4 inch and place over the balsamic and mozzarella. To chiffonade the basil, stack the leaves on top of each other, the biggest on bottom, and roll from one side to the other. Once the basil is rolled, pinch together and thinly slice using a sharp knife. Sprinkle the sliced basil on the tomatoes.
  3. Heat a skillet. Once heated, pour in 1 tbs with olive oil. Once the oil is hot, place a single tortilla in the pan to heat and crisp. After 1-2 minutes take the tortilla off and put the other one on with the cheese, tomato and basil, and cover with the crispy tortilla. Cook on medium low, until melty and crispy.

  5. Whisk all the ingredients together and drizzle on top of the quesadilla
