Ingredients
Roasted Sweet Potatoes
  • 1 Sweet potato
  • 3 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp cinnamon
  • salt & pepper
Vegi Stir-fry
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 Onion
  • 1/2 Bell pepper
  • 1/2 Zucchini
  • 1/2 cup Mushrooms
  • 2 tsp Umami seasoning optional
  • salt & pepper
Toppings
  • 2 cups lettuce
  • 1/2 cup Tzatziki
  • 1 Avocado mashed or sliced
  • 1/4 cup Cilantro chopped
Instructions
Roasted Sweet Potatoes
  1. Wash and peel the potatoes, and dice them up!

  2. Place potatoes on a tray and drizzle oil, garlic, cinnamon, salt, and pepper.

  3. Cook on 350º for 23-25 minutes, or until browned and soft.

  4. Set aside.

Sautéed Vegies
  1. Heat a medium sized pan and add oil once heated.

  2. Add minced garlic and let cook until browned. Then, add vegis and let cook until browned and softend.

To Assemble
  1. Place lettuce into a bowl as your base.

  2. Layer the vegetables, sweet potatoes, tzatziki, and avocado on top of the lettuce however you may like. Top with cilantro and Enjoy!

Recipe Notes

-For the umami seasoning, I found mine at Trader Joes, and have not seen it anywhere else. It is not a necessity to this dish, but I like the flavor it brings. 

 

-For the base I chose lettuce, but there are so many more options you can choose from. Quinoa and rice would be two great choices that provide many great benefits, like fiber which helps lower cholesterol and control blood sugar levels.
