Asian-Style Rice Bowl

Happy Monday! End it with this delicious rice bowl:)

Asian-Style Rice Bowl
  • 1 cup rice
  • 2 cups water
  • 2 Chicken Breast
  • 1 cups mushrooms
  • 1/2 head broccoli
  • Salt
  • Pepper
  • garlic power
  • Chopped peanuts, optional
  • 1/3 cup soy sauce
  • 1 tbsp ginger
  • 1/4 sesame oil
  • 2 tsp honey
  • garlic power
  1. Start rice by bringing 2 cups of water to a boil. Stir in rice, cover, and let simmer for 20 minutes or until all water is absorbed. 

  2. Cook chicken breasts whole until almost cooked all the way through in olive oil. Season with salt, pepper, and garlic power. Remove from heat and cut up into smaller pieces. 

  3. Add chopped mushrooms and broccoli to the same pan used to cook the chicken. Sauté for 4-5 minutes. Add salt, pepper, and garlic. Add chicken and chopped peanuts.

    Add half the sauce the vegetables and chicken and set the rest a side. 

  1. Combine all ingredients. Pour half into chicken and vegetables and half into the rice.
